Cranberry Pear Relish

Ingredients
- 1 lb. cranberries fresh
- 2 cups sugar
- 1 cup orange juice freshly squeezed
- 1 tablespoon orange zest finely grated
- 2 pears cored,peeled & diced
Instructions
- Combine all of the ingredients in a heavy saucepan and stir well. Place
- the pan over medium heat and boil until the berries pop open, about 10
- minutes.
- Cool relish to room temperature. Refrigerate, covered, for up to 2
- months.
Notes
NOTES : When choosing pears, either Anjou or Bosc will do. Anjou pears are juicier. Buy slightly underripe pears.
