Cranberry Pear Relish

Ingredients

  • 1 lb. cranberries fresh
  • 2 cups sugar
  • 1 cup orange juice freshly squeezed
  • 1 tablespoon orange zest finely grated
  • 2 pears cored,peeled & diced

Instructions

  • Combine all of the ingredients in a heavy saucepan and stir well. Place
  • the pan over medium heat and boil until the berries pop open, about 10
  • minutes.
  • Cool relish to room temperature. Refrigerate, covered, for up to 2
  • months.

Notes

NOTES : When choosing pears, either Anjou or Bosc will do. Anjou pears are juicier. Buy slightly underripe pears.
