Marinated Cheese

Ingredients
- 1/2 cup olive oil
- 1/2 cup white wine vinegar
- 2 ounces pimientos drained and diced
- 3 tablespoons fresh parsley chopped
- 3 tablespoons green onions minced
- 3 cloves garlic minced
- 1 teaspoon sugar
- 3/4 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 8 ounces sharp cheddar cheese chilled
- 8 ounces cream cheese chilled
Instructions
- Mix first ten ingredients together in a jar and shake to mix.
- Slice blocks of chilled cheese in half lengthwise and then slice each half
- lengthwise again. Cut into small squares and alternate cheeses in four
- rows in a dish. Pour marinade over all; cover and refrigerate 8 hours.
- Transfer cheese to serving dish and pour marinade over the top. Maybe
- garnished with fresh herbs. Serve with baguette slices.
- Leftover marinade is a great condiment for french bread slices to be
- toasted.
- Notes:
- NOTES : Dried parsley, dehydrated minced onion, and garlic powder may be substituted.
