Marinated Cheese

Ingredients

  • 1/2 cup olive oil
  • 1/2 cup white wine vinegar
  • 2 ounces pimientos drained and diced
  • 3 tablespoons fresh parsley chopped
  • 3 tablespoons green onions minced
  • 3 cloves garlic minced
  • 1 teaspoon sugar
  • 3/4 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 8 ounces sharp cheddar cheese chilled
  • 8 ounces cream cheese chilled

Instructions

  • Mix first ten ingredients together in a jar and shake to mix.
  • Slice blocks of chilled cheese in half lengthwise and then slice each half
  • lengthwise again. Cut into small squares and alternate cheeses in four
  • rows in a dish. Pour marinade over all; cover and refrigerate 8 hours.
  • Transfer cheese to serving dish and pour marinade over the top. Maybe
  • garnished with fresh herbs. Serve with baguette slices.
  • Leftover marinade is a great condiment for french bread slices to be
  • toasted.
  • Notes:
  • NOTES : Dried parsley, dehydrated minced onion, and garlic powder may be substituted.
