Zucchini Bread

Ingredients
- 3 large eggs beaten
- 1 cup vegetable oil
- 2 1/2 cups sugar
- 2 cups zucchini grated
- 3 cups flour all-purpose
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 cup chopped pecans
Instructions
- Mix all ingredients in same bowl. You may stir by hand or on low speed of
- mixer just until combined. Bake at 350 degrees in a greased and floured
- tube or bundt pan for 1 hour or until it tests done. Cool 10 minutes in
- pan then turn out on wire rack.
Notes
Makes 24 muffins. Bake at 350 degrees for 20-22 minutes.
