Zucchini Bread

Ingredients

  • 3 large eggs beaten
  • 1 cup vegetable oil
  • 2 1/2 cups sugar
  • 2 cups zucchini grated
  • 3 cups flour all-purpose
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 cup chopped pecans

Instructions

  • Mix all ingredients in same bowl. You may stir by hand or on low speed of
  • mixer just until combined. Bake at 350 degrees in a greased and floured
  • tube or bundt pan for 1 hour or until it tests done. Cool 10 minutes in
  • pan then turn out on wire rack.

Notes

Makes 24 muffins. Bake at 350 degrees for 20-22 minutes.
