Zucchini Bread

Ingredients

large eggs
beaten

cup
vegetable oil
2 1/2
cups
sugar

cups
zucchini
grated
3
cups
flour
all-purpose

teaspoon
baking soda
1
teaspoon
salt
1/2
teaspoon
baking powder
1
teaspoon
vanilla
1
teaspoon
cinnamon
1
cup
chopped pecans
Instructions
Mix all ingredients in same bowl. You may stir by hand or on low speed of
mixer just until combined. Bake at 350 degrees in a greased and floured
tube or bundt pan for 1 hour or until it tests done. Cool 10 minutes in
pan then turn out on wire rack.
Notes
Makes 24 muffins. Bake at 350 degrees for 20-22 minutes.
