Turkey-Spinach Meatloaf

Ingredients

  • 2 lbs. ground turkey 7% fat
  • 10 ounces frozen chopped spinach thawed and squeezed dry
  • 2/3 cup chili sauce
  • 1/2 cup bread crumbs
  • 1/2 cup Parmesan cheese grated
  • 4 large eggs lightly beaten
  • 2 large garlic cloves pressed or 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoon salt
  • 1 teaspoon pepper

Instructions

  • Preheat oven to 350 degrees.
  • Combine all ingredients. Shape into a loaf and place in a shallow baking
  • dish sprayed with Pam. Spoon additional chili sauce over the whole loaf.
  • Or shape into 10 (1/2 cup) loaves.
  • Bake 45 minutes or until a meat thermometer inserted in the middle
  • registers 160F. An instant read thermometer works well. Freeze leftovers.
