Tomato Pie

Ingredients

  • refrigerated pie crust baked & cooled
  • fresh tomatoes
  • salt
  • green onion with tops chopped
  • fresh basil leaves
  • mayonnaise
  • sharp cheddar cheese shredded

Instructions

  • Bake pie crust 10 minutes and cool.
  • Place sliced tomatoes on a rack, sprinkle with salt, and let stand about 2 hours. This keeps the pie from becoming soggy.
  • Place tomatoes on bottom of pie shell. Season with freshly ground pepper. Sprinkle green onions over tomatoes. Lay whole fresh basil leaves over onions. Spread some mayo next and top with cheese. Bake at 350 degrees for 30 minutes.
