Sweet Potato Biscuits

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 3 tablespoons light brown sugar
- 1/2 cup butter melted
- 1 cup sweet potatoes mashed
- 2/3 cup buttermilk
- 1 teaspoon vanilla
Sift together dry ingredients. Mix brown sugar, melted butter and sweet
potatoes with an electric mixer. Fold flour and sweet potato mixture
together and add buttermilk and vanilla.
Gently mix with your hands and turn out on a lightly floured surface.
Roll or pat to about 3/4 inch thickness and cut with a biscuit cutter.
Bake on a greased baking sheet at 375 degrees for about 25 minutes.
NOTES : Cook 1 large sweet potatoe in microwave and cool.
Serve bisquits with butter and homemade fig or strawberry
preserves.
SWEET POTATOE PANCAKES
Pat pancake size rounds and cook on greased griddle slowly until
done on both sides. Serve with butter and syrup.
