1/4lb.heirloom beefsteak tomatoescut into thick wedges
1/4lb.heirloom cherry or pear tomatoeshalved
1tablespoonsherry vinegar
1 1/2teaspoonsextra-virgin olive oil
1teaspoonhoney
1/8teaspoonsalt
1/8teaspoonfreshly ground black pepper
1/4cup1 ounce crumbled feta cheese
2tablespoonssmall basil leaves or torn basil
Instructions
Combine first 4 ingredients in a large bowl.
Combine vinegar, olive oil, honey, salt, and pepper in a small bowl, stirring with a whisk. Drizzle vinegar mixture over peach mixture; toss well to coat. Sprinkle with cheese and basil.
