Summer Pasta

Ingredients

  • 1 lb. angel hair pasta or any other pasta
  • 1/2 cup olive oil
  • 1/4 cup fresh basil chopped
  • 1 tablespoon fresh oregano chopped
  • 1/2 cup fresh Italian parsley chopped
  • 2 large garlic cloves chopped
  • 1/2 teaspoon salt
  • pepper to taste
  • 4 green onions chopped
  • 2 cups cherry tomatoes halved
  • Parmesan cheese grated

Instructions

  • Boil water and cook pasta.
  • In the bottom of a large pasta serving dish, stir together olive oil,
  • basil, oregano, parsley, garlic, salt, pepper and onions. Add tomatoes
  • and toss. Peeled and chopped regular tomatoes may be used.
  • When pasta is done, drain but do not rinse. Quickly, while still hot,
  • pour the pasta onto the items in the pasta dish and toss to combine.
  • Serve hot with Parmesan cheese and additional olive oil if desired.
