Wash strawberries in cold water and pat dry on paper towels. Remove stems
and cut into quarters.
In a blender, combine strawberries, preserves and vinegar, and puree 1 to
2 minutes until smooth. With blender running, slowly add the oil.
Continue to blend until dressing is emulsified. Store covered in a lidded
jar in the refrigerator and shake vigorously to re-emulsify before
serving.
