Strawberry Vinaigrette Dressing

Ingredients

  • 16 ounces fresh strawberries
  • 1/2 cup strawberry preserves
  • 1/4 cup Champagne wine vinegar
  • 1 cup grapeseed oil

Instructions

  • Wash strawberries in cold water and pat dry on paper towels. Remove stems
  • and cut into quarters.
  • In a blender, combine strawberries, preserves and vinegar, and puree 1 to
  • 2 minutes until smooth. With blender running, slowly add the oil.
  • Continue to blend until dressing is emulsified. Store covered in a lidded
  • jar in the refrigerator and shake vigorously to re-emulsify before
  • serving.

Notes

NOTES : A serving is about 2 tablespoons. This makes a lot of dressing and doesn't keep but a couple of days so you may want to only make half of it.
