Standing Rib Roast

Ingredients
5 1/2
lbs.
beef rib roast
room temperature
salt and pepper
to taste
Instructions
Place roast, rib side down, on rack in shallow roasting pan. Salt and
pepper. Do not cover. Bake l hour. Turn oven off. Let roast sit in
oven for 2 hours. Do not open oven door. Cook an additional 30 minutes
before serving for a rare roast and an additional 45 minutes for a medium
roast.
