Standing Rib Roast

Ingredients

  • 5 1/2 lbs. beef rib roast room temperature
  • salt and pepper to taste

Instructions

  • Place roast, rib side down, on rack in shallow roasting pan. Salt and
  • pepper. Do not cover. Bake l hour. Turn oven off. Let roast sit in
  • oven for 2 hours. Do not open oven door. Cook an additional 30 minutes
  • before serving for a rare roast and an additional 45 minutes for a medium
  • roast.
