Process all ingredients in blender slowly adding oil last until emulsified. Pour into container, refrigerate and let rest for several hours before using. Will keep in refrigerator for 2-3 weeks.

Use as dressing in a Fresh Spinach Salad with the following optional ingredients:
Sliced fresh mushrooms
Bacon
Toasted Almonds
Sliced purple onions
Mandarin oranges
Boiled eggs
