Spinach Salad Dressing

Ingredients

  • 1 cup olive oil
  • 5 tablespoons red wine vinegar
  • 4 tablespoons fat free Greek yogurt or sour cream
  • 1 1/2 teaspoons salt
  • 2 tablespoons sugar or Splenda
  • fresh ground pepper
  • 2 teaspoons fresh parsley chopped
  • 2 cloves garlic
  • 1/2 teaspoon dry mustard

Instructions

  • Process all ingredients in blender slowly adding oil last until emulsified. Pour into container, refrigerate and let rest for several hours before using. Will keep in refrigerator for 2-3 weeks.

Notes

Use as dressing in a Fresh Spinach Salad with the following optional ingredients:
Sliced fresh mushrooms
Bacon
Toasted Almonds
Sliced purple onions
Mandarin oranges
Boiled eggs
Craisins
Canola oil or a blend of the two may be substituted.
