Southwestern Caesar Salad with Garlic Chipotle Chili Dressing

Ingredients

  • 1/2 cup mayonnaise
  • 1 1/2 tablespoon canned low-salt chicken broth
  • 1 tablespoon soy sauce
  • 2 tablespoons fresh lemon & lime juice
  • 1 1/2 teaspoon minced canned chipotle chilies in adobo sauce
  • 1 tablespoon brown sugar
  • 1 large garlic clove minced
  • 2 medium tomatoes seeded, diced
  • romaine lettuce
  • fresh corn kernels grilled
  • canned black beans drained
  • 4 tablespoons Manchego cheese shredded
  • salt & freshly ground pepper to taste

Instructions

  • Whisk mayonnaise, chicken broth, soy sauce, lemon & lime juices, chipotles, brown sugar and garlic in medium bowl to blend. Season dressing to taste with salt and pepper. (Dressing can be prepared 1 day ahead. Cover and refrigerate.)
  • Mix lettuce, tomatoes, corn and black beans in large bowl. Add dressing and 2 tablespoons Manchego cheese and toss to coat. Sprinkle with remaining 2 tablespoons Manchego cheese, garnish with tortilla strips or cornbread croutons, avocado slices & fresh lime wedges if desired and serve.
  • Notes:
  • Soy sauce may be eliminated or use Worcestershire sauce if desired.
