Roasted Green Beans with Crispy Shallots

This even works well with frozen green beans that have been thawed.

Ingredients

  • 1 lb. haricots verts trimmed
  • 1/2 cup thinly sliced shallots
  • 1 tablespoon olive oil
  • 1/4 teaspoon kosher salt
  • freshly ground black pepper to taste

Instructions

  • Preheat oven to 450°.
  • Combine haricots verts, shallots, olive oil, and kosher salt on a foil-lined baking sheet. Roast at 450° for 10 minutes or until crisp-tender.
  • Note: I sometimes turn on the broiler to crisp the shallots and green beans to our liking.
