Roast Pork with Brie and Apples

Ingredients

ounces
bacon
coarsely chopped
1
red apple
diced
1
medium yellow onion
diced

lbs.
pork tenderloin

ounces
Brie cheese
diagonally sliced
Instructions
Cook the bacon, apple and onion in a skillet over medium heat until the
bacon is crisp. Remove to a bowl. Refrigerate until cool.
Cut a pocket in the pork tenderloin. Combine the bacon mixture and the
cheese and mix well. Stuff into the pocket. Tie the pocket closed with 4
pieces of butcher's string. Place in a roasting pan. Roast at 350
degrees for 35 minutes or to 160 degrees on a meat thermometer. Let stand
for 10 minutes before carving.
