Rigatoni with Sausage & Mushrooms

Ingredients

  • olive oil
  • 1 large onion sliced
  • 1 small green bell pepper diced
  • 4 large garlic cloves minced
  • 12 ounces chicken sausage w/porcini mushrooms sliced in rounds
  • 26 oz. San Marzano Vodka Sauce
  • 6 oz. shitttake mushrooms drained
  • salt & freshly ground pepper to taste
  • fresh parsley chopped
  • parmesan cheese grated
  • 8 ounces whole wheat rigatoni cooked

Instructions

  • Saute onion, bell pepper, garlic & sausage in olive oil. Add sauce & mushrooms. Season with salt & pepper. Simmer with top off for about 10 minutes. Stir in cooked rigatoni & parsley and serve with parmesan cheese.

Notes

I use Harris Teeter's brand of sausage.
