Ricky Ricardo Chicken Wings

Ingredients

  • 12 chicken wings or drumettes
  • salt and pepper to taste
  • 2 tablespoons creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 1/2 tablespoons honey
  • 1/2 teaspoon ground cumin
  • 1 clove garlic minced
  • 1/4 teaspoon crushed red pepper to taste
  • 3 ounces peanuts dry-roasted, finely chopped
  • 3 teaspoons coriander leaves finely chopped

Instructions

  • Preheat oven to 400 degrees. In shallow baking pan lined with foil,
  • season chicken wings or drumettes with salt and pepper. Bake in middle of
  • oven for 30 minutes or until they begin to turn brown and become crisp.
  • While chicken wings are baking, in a small saucepan, stir together peanut
  • butter, soy sauce, honey, cumin, garlic and pepper flakes. Cook over low
  • heat, stirring until smooth. Brush chicken wings generously with sauce
  • and bake them for 10-15 more minutes. Sprinkle chicken wings immediatedly
  • with chopped peanuts and coriander and let them cool slightly before
  • serving.

Notes

NOTES : Peanuts should be salted.
