Pineapple Pound Cake with Glaze

Ingredients

  • 1/2 pound butter
  • 1/2 cup Crisco
  • 2 3/4 cups sugar
  • 6 large eggs
  • 3 cups all-purpose flour sifted
  • 1 teaspoon baking powder
  • null pinch salt
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 3/4 cup crushed pineapple in heavy syrup undrained
  • 1/4 cup butter
  • 2-3 cups powdered sugar
  • 1 cup crushed pineapple drained

Instructions

  • Mix ingredients the same as with other pound cakes, adding pineapple last.
  • Put cake in cold oven. Set oven at 325 degrees and bake for 1 1/2 hours.

GLAZE;

  • Mix ingredients and let stand in refrigerator.
  • Spread on top and sides of cake. I do this about 20 minutes after cake comes out of oven. Some of the glaze runs off but as it cools it will hold most of it.
