Pear & Feta Salad with Orange Vinaigrette

Ingredients

  • 1/3 cup pecans coarsely chopped
  • 1 tablespoon honey
  • romaine lettuce or mesculan mix
  • 2 pears thinly sliced
  • 2 ounces feta cheese crumbled
  • 1/3 cup sweet orange marmalade
  • 3 tablespoons rice vinegar
  • 2 tablespoons vegetable oil
  • 1 tablespoon shallot finely minced
  • black pepper freshly ground
  • pinch salt
  • 1/4 lemon juiced

Instructions

  • Preheat oven to 300 degrees.
  • Spray Pam on a foil-lined baking sheet, spread pecans and drizzle honey
  • over them. Bake about 10-15 minutes until golden. Sprinkle with salt and
  • let cool.
  • In a large bowl, layer lettuce, sliced pears, feta cheese and pecans.
  • Put sweet orange marmalade, rice vinegar, oil, shallot and pepper in a jar
  • and shake until blended. Store in refrigerator.
  • Toss with Orange Vinaigrette to coat just before serving.

Notes

NOTES : For vinaigrette, sweet onion or red onion may be substituted. Grilled chicken or shrimp are good additions.
