Pasta with Sausage & Peppers

Ingredients

  • 16 ounces penne pasta cooked
  • 1 lb. Italian sausage mild
  • 1/2 medium red onion chopped
  • 1/2 medium red bell pepper sliced 1/4" thick
  • 1/2 medium green bell pepper sliced 1/4" thick
  • 1 tablespoon olive oil
  • 2 large garlic cloves minced
  • 1/2 cup chicken broth
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil optional, chopped
  • 1/4 cup Parmesan cheese shredded

Instructions

  • Cook pasta and set aside.
  • Cook sausage over medium-high heat until done and drain. You may crumble
  • or slice the sausage.
  • Saute onion and bell peppers in hot olive oil. Add garlic and saute.
  • Stir in sausage, cooked pasta, broth, red pepper flakes and black pepper.
  • Reduce heat to low and cook stirring for about 5 minutes.
  • Transfer to pasta dish or plates and top with chopped basil and Parmesan
  • cheese.

Notes

NOTES : I added 2 boneless, skinless chicken breasts, diced, with sausage.
