Parmesan Baked Scallops

Ingredients

  • 1 lb. large scallops
  • 1/2 cup bread crumbs
  • 2 teaspoons butter
  • 1/2 cup white wine
  • 4 tablespoons Parmesan cheese grated
  • salt
  • fresh ground black pepper
  • 1/2 cup parsley fresh
  • 1 large lemon squeezed
  • 1 large garlic clove pressed

Instructions

  • Preheat oven to 350 degrees. Rinse scallops and place in a small baking
  • dish sprayed with Pam and just large enough to hold them in one layer.
  • Squeeze lemon over scallops. Sprinkle with bread crumbs and toss to coat.
  • Combine melted butter & garlic and pour over scallops. Add wine to
  • baking dish and bake for 15 minutes. Remove from oven and turn on
  • broiler. Sprinkle scallops with Parmesan cheese, salt and fresh ground
  • black pepper and place under broiler for 5-10 seconds. Watch carefully -
  • they will brown quickly. Serve on bed of linguine or rice if desired and
  • sprinkle parsley on top.
