Parmesan Baked Scallops

Ingredients

large scallops
1/2
cup
bread crumbs
2
teaspoons
butter
1/2
cup
white wine
4
tablespoons
Parmesan cheese
grated
salt
fresh ground black pepper
1/2
cup
parsley
fresh
1
large lemon
squeezed
1
large garlic clove
pressed
Instructions
Preheat oven to 350 degrees. Rinse scallops and place in a small baking
dish sprayed with Pam and just large enough to hold them in one layer.
Squeeze lemon over scallops. Sprinkle with bread crumbs and toss to coat.
Combine melted butter & garlic and pour over scallops. Add wine to
baking dish and bake for 15 minutes. Remove from oven and turn on
broiler. Sprinkle scallops with Parmesan cheese, salt and fresh ground
black pepper and place under broiler for 5-10 seconds. Watch carefully -
they will brown quickly. Serve on bed of linguine or rice if desired and
sprinkle parsley on top.
