Preheat oven to 450 degrees. Place large sheet of aluminum foil on baking

sheet and crimp edges to form sides. With a paper towel, lightly spread a

very thin layer of olive oil on foil. Wash fish and pat dry with paper

towels. Salt and pepper fish, dip in egg and then in cracker meal and

place on aluminum foil skin side down. Spray generously with butter

spray. Bake for about 45 minutes or until golden brown and crispy.
