Mediterranean Orzo

Ingredients

  • 1 lb. orzo cooked
  • 2 tablespoons olive oil
  • 2 cloves fresh garlic minced
  • 1/2 cup sun-dried tomatoes oil-packed, drained and chopped
  • 1 yellow pepper chopped
  • 1 green pepper chopped
  • 1 red pepper chopped
  • 1 large onion chopped
  • 1/4 cup black olives chopped
  • 1 teaspoon oregano
  • 1/2 teaspoon ground black pepper
  • 1/4 cup parsley chopped
  • 1/4 cup red wine vinegar
  • 4 ounces feta cheese crumbled
  • salt and pepper to taste

Instructions

  • Heat oil in skillet. Add garlic, sun-dried tomatoes, peppers, and onion.
  • Saute about 5 minutes. Toss together hot cooked orzo, vegetables,
  • olives, seasonings, parsley,red wine vinegar and feta cheese.

Notes

NOTES : Parmesan cheese really adds a lot of flavor. Add vegetables such as steamed broccoli or asparagus and fresh chopped tomatoes. Grilled chicken or shrimp makes this a great one dish meal. It is also delicious cold.
