1/2cupsun-dried tomatoesoil-packed, drained and chopped
1yellow pepperchopped
1green pepperchopped
1red pepperchopped
1large onionchopped
1/4cupblack oliveschopped
1teaspoonoregano
1/2teaspoonground black pepper
1/4cupparsleychopped
1/4cupred wine vinegar
4ouncesfeta cheesecrumbled
salt and pepperto taste
Instructions
Heat oil in skillet. Add garlic, sun-dried tomatoes, peppers, and onion.
Saute about 5 minutes. Toss together hot cooked orzo, vegetables,
olives, seasonings, parsley,red wine vinegar and feta cheese.
Notes
NOTES : Parmesan cheese really adds a lot of flavor. Add vegetables such as steamed broccoli or asparagus and fresh chopped tomatoes. Grilled chicken or shrimp makes this a great one dish meal. It is also delicious cold.Recipe By: Sherry Moman
