Lemon Blueberry Bread

Ingredients

  • 1 cup butter softened
  • 2 cups sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 cups blueberries fresh or frozen
  • 1 large lemon zested and juiced
  • 1 teaspoon vanilla

Instructions

  • Cream butter and sugar. Beat in eggs. Sift dry ingredients and add
  • alternately with milk. Fold in blueberries, lemon zest and vanilla.
  • Reserve lemon juice for glaze. Bake at 350 degrees in 2 large greased and
  • floured loaf pans for 50 minutes or until bread tests done. It takes
  • longer if you use frozen berries. Let cool in pans for about 15 minutes
  • before you turn out bread.
  • LEMON GLAZE (optional)
  • Mix juice of 1 lemon with confectioners' sugar until it has the
  • consistency of a glaze. Pour over warm bread and let soak in.
