Brown sausage. Drain between paper towels to remove excess fat and wash
out skillet. Add next 5 ingredients with sausage and simmer uncovered
until thick adding a little water if necessary. Cook noodles in boiling
salted water with a little olive oil; drain and rinse. Beat eggs; add
remaining ingredients, except mozzarella.
Spray a 13x9 baking dish with Pam. Layer half the noodles in dish; spread
with half the cheese filling; add half the mozzarella cheese and half the
meat sauce. Repeat. Bake at 375 degrees about 30 minutes or assemble
early and refrigerate and bake for 45 minutes. Let stand 10 minutes
before serving. Freezes well.
