Lasagne

Ingredients

  • 1 lb. pork sausage hot
  • 4 large cloves garlic minced
  • 1 tablespoon basil
  • 1 teaspoon salt
  • 14 1/2 ounces diced tomatoes
  • 12 ounces tomato paste
  • 8 ounces lasagna noodles
  • 2 large eggs
  • 3 cups cottage cheese lowfat
  • 1/2 cup Parmesan cheese grated
  • 2 tablespoons parsley freeze-dried
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lb. mozzarella cheese sliced thin

Instructions

  • Brown sausage. Drain between paper towels to remove excess fat and wash
  • out skillet. Add next 5 ingredients with sausage and simmer uncovered
  • until thick adding a little water if necessary. Cook noodles in boiling
  • salted water with a little olive oil; drain and rinse. Beat eggs; add
  • remaining ingredients, except mozzarella.
  • Spray a 13x9 baking dish with Pam. Layer half the noodles in dish; spread
  • with half the cheese filling; add half the mozzarella cheese and half the
  • meat sauce. Repeat. Bake at 375 degrees about 30 minutes or assemble
  • early and refrigerate and bake for 45 minutes. Let stand 10 minutes
  • before serving. Freezes well.

Notes

NOTES : I like to use whole wheat noodles and add blanched, fresh spinach to the layers. Jimmy Dean Hot Pork Sausage is good. I also use fresh, chopped basil and parsley when I have it.
