Guacamole

Ingredients

  • 1 1/2 tablespoons white onion finely chopped
  • 5 teaspoons fresh cilantro finely chopped
  • 1 1/4 teaspoons jalapeno pepper seeded and chopped
  • 1/2 teaspoon coarse salt
  • 1 avocado peeled and chopped
  • 3 tablespoons tomato seeded and chopped

Instructions

  • In a Mexican molcajete (or a medium- sized bowl), mash onion, 1 tablespoon cilantro, jalapeno and salt until smooth and juicy. Add avocado, and mash slightly (avocado should remain somewhat chunky). Stir in tomato and remaining 2 teaspoons cilantro. Season with salt, if desired. Serve immediately.

Notes

NOTES : A Mexican molcajete is a bowl made from volcanic rock. Use Hass avocados. Or use red onion.
