Green Chili Stew

Ingredients

  • 1 pound pork tenderloin cubed
  • 1 medium onion chopped
  • 2 cloves garlic chopped
  • 2 tablespoons flour
  • 2 tablespoons vegetable oil
  • 6 large green chiles roasted and peeled
  • 1 large potatoe cubed
  • 3 carrots peeled and chopped
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Mexican oregano

Instructions

  • Dredge pork in flour. Heat oil and brown pork. Add onion and garlic and cook 5 minutes. Add chicken broth, chopped chilies, tomatoes, carrots, potatoes, salt, pepper, & oregano. Cook until veggies are tender. Adjust seasoning. Serve with flour tortillas, cornbread, cheese, avocados, sour cream, cilantro or whatever you want. This dish cooks well on low in a crock pot.
