Green Chili Pork Tenderloin

Ingredients

  • 2 pork tenderloins
  • 6-8 green chiles roasted, peeled & chopped
  • 1/2 cup onions chopped
  • 1 can stewed tomatoes
  • 1 can chicken broth
  • 1 teaspoon cumin or chili powder
  • salt & black pepper to taste

Instructions

  • Preheat oven to 250 degrees.
  • Brown meat on all sides in a greased skillet. Add onions and cook for 5 minutes. Place the pork and onions in a baking dish. Add chopped green chilies, tomatoes and chicken broth. Season with salt and pepper and cumin or chili powder to taste.
  • Cover with foil tightly and bake in oven for 6-7 hours. Or cook in crock pot on low for 8 hours.
  • Shred the pork with two forks and mix with the sauce.
  • Serve with flour tortillas and condiments: avocados, salsa, cilantro, cheese, sour cream, etc.
