Green Chili Chicken Roulade

Ingredients

boneless
skinless chicken breasts
6-8
green chiles
roasted, peeled & seeded
1/2
lb.
Monterey Jack cheese
cut into strips
1/2
cup
Ritz cracker crumbs
1/4
cup
Parmesan Cheese
1-3
teaspoons
chili powder
1/2
teaspoon
salt
1/4
teaspoon
cumin
1/4
teaspoon
pepper
6
tablespoons
butter
melted
Instructions
Preheat oven to 400 degrees. Spray a 13x9 baking dish with Pam.
Pound chicken until flat.
Put a green chili and a strip of cheese in the center of each chicken breast. Roll up.
Combine cracker crumbs, parmesan cheese, and spices.
Dip chicken in melted butter then roll in bread crumb mixture. Place in dish, seam side down. Cover and chill.
Bake 25-40 minutes at 400 degrees.
