Green Chili Chicken Roulade

Ingredients

  • 8 boneless skinless chicken breasts
  • 6-8 green chiles roasted, peeled & seeded
  • 1/2 lb. Monterey Jack cheese cut into strips
  • 1/2 cup Ritz cracker crumbs
  • 1/4 cup Parmesan Cheese
  • 1-3 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon pepper
  • 6 tablespoons butter melted

Instructions

  • Preheat oven to 400 degrees. Spray a 13x9 baking dish with Pam.
  • Pound chicken until flat.
  • Put a green chili and a strip of cheese in the center of each chicken breast. Roll up.
  • Combine cracker crumbs, parmesan cheese, and spices.
  • Dip chicken in melted butter then roll in bread crumb mixture. Place in dish, seam side down. Cover and chill.
  • Bake 25-40 minutes at 400 degrees.
