3-4cupsred leaf lettucetorn into bite sized pieces
1/2cupgrape tomatoescut in half
1/4cupseedless cucumbersliced and cut in quarters
10pitless Kalamata olivessliced in half (lengthwise)
1/3cupFeta cheese crumblesI buy the herbed one
1/4cupminced red onionoptional; sometimes I put it in, sometimes not
DRESSING:
1-2clovesgarlicpressed
3tablespoonsextra virgin olive oil
1tablespoonbalsamic vinegar
2shakes dried basil
1shake oregano
Instructions
In a large mixing bowl, place all the salad ingredients. In a small pitcher or juice glass (that's what I use), place the dressing ingredients. Stir well with a fork.
Pour dressing over the top of the salad and toss well. Serve immediately with freshly ground pepper over the top.
