Ginger-Glazed Pork Tenderloin

Ingredients

  • 2 lbs. pork tenderloins
  • salt to taste
  • 1/3 cup apricot preserves
  • 3 large garlic cloves minced
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger peeled and grated
  • green onions to garnish

Instructions

  • Place pork tenderloins in a baking dish sprayed with Pam or a use a
  • non-stick pan. Sprinkle evenly with salt.
  • Combine preserves and next 4 ingredients. Spread evenly over pork.
  • Bake at 425 degrees for 45 minutes or until cooked to desired doneness.
  • Remove from oven; cover and let stand 10 minutes. Garnish with green onion
  • strips if desired. Serve over rice.

Notes

NOTES : I make more of the apricot mixture because we like a lot of sauce to serve over rice, etc. I usually use a 12 ounce jar of preserves and triple the garlic & soy sauce. I usually use a nice large piece of ginger.
