Mix crab meat, lemon juice, dash salt and Old Bay, onion, egg and 1/2 of Ritz cracker crumbs.
Season underside of flounder with salt & pepper. Spoon crab mixture over fillets, roll up and secure with a toothpick. Place toothpick side down in cast iron skillet.
Place a lemon slice on top of each flounder roll. Sprinkle with remaining Ritz cracker crumbs & parsley, and pour melted butter over all. Pour white wine around fish. Bake about 20-25 minutes until golden & flakey.
