Crab Stuffed Flounder Rolls

Ingredients

  • 8 flounder fillets
  • 1 lb. fresh jumbo lump crab meat picked clean
  • 1 lemon juiced
  • salt
  • Old Bay seasoning to taste
  • 1/4 cup Vidalia onion finely minced
  • 1 egg beaten
  • 1 roll Ritz cracker crumbs
  • salt & pepper to taste
  • 8 lemon slices
  • fresh parsley finely chopped
  • 4 tablespoons butter melted
  • 8 ounces white wine

Instructions

  • Preheat oven to 400 degrees.
  • Oil a cast iron skillet with olive oil.
  • Mix crab meat, lemon juice, dash salt and Old Bay, onion, egg and 1/2 of Ritz cracker crumbs.
  • Season underside of flounder with salt & pepper. Spoon crab mixture over fillets, roll up and secure with a toothpick. Place toothpick side down in cast iron skillet.
  • Place a lemon slice on top of each flounder roll. Sprinkle with remaining Ritz cracker crumbs & parsley, and pour melted butter over all. Pour white wine around fish. Bake about 20-25 minutes until golden & flakey.
