Crab Cakes (Vicki Latimer)

Ingredients

lb.
jumbo lump crabmeat
picked clean
1/2
cup
mayonnaise
1
large egg
beaten
1
tablespoon
Dijon mustard
1
tablespoon
Worcestershire sauce
1/2
teaspoon
hot sauce
optional
seafood seasoning
1
cup
saltine cracker crumbs
Instructions
Mix all ingredients well and fold with cracker crumbs into crabmeat. Form into 8 patties and place on cookie sheet in refrigerator to firm up. Right before serving, fry to a golden brown in canola oil.
