Cowboy Salsa (aka Cowboy Caviar)

Ingredients

  • 1 can shoepeg white corn
  • 15 ounces black beans washed & drained
  • 1 large jar banana peppers chopped
  • 1/2 bunch green onions chopped
  • 1/2 bunch cilantro chopped
  • 5 Roma tomatoes chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin powder
  • 2 large garlic cloves minced

Instructions

  • Combine ingredients for salsa. Mix dressing ingredients and add to salsa. Serve with chips (Doritos Scoops are great).

Notes

I leave out the onions.
