Chili Rellenos Casserole

Ingredients

  • 6-10 fresh green chilies roasted & peeled
  • 2 cups Monterey jack & sharp cheddar cheese shredded
  • Batter:
  • 1/4 cup all-purpose flour
  • 1/2 cup milk
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs separated

Instructions

  • Preheat oven to 350 degrees.
  • Spray 9x13 dish with Pam. Line dish with chilies and cheese, alternating layers.
  • Beat milk, egg yolks and flour. Mix well until creamy. Beat egg whites until stiff and fold into batter.
  • Pour over chilies and cheese and bake until set.
  • Serve with red chile sauce or salsa.
