Chicken Stir Fry with Greek Feta

Ingredients

  • 8 ounces of boneless chicken breast halves
  • 2 tablespoons soy sauce
  • 4 tablespoon extra virgin olive oil
  • 1 ½ teaspoons garlic powder
  • 2 cups of broccoli florets
  • 1 cup of cauliflower
  • 1 cup thinly sliced carrots
  • 1/2 white onion thinly sliced
  • 2 pinches of oregano
  • 1/2 cup of Greek* or French Feta*
  • 1/2 cup raw brown or white rice cooked according to package directions

Instructions

  • Cut chicken into ½-in. strips. In a large skillet, heat the oil. Stir-fry chicken until no longer pink,
  • about 3-5 minutes, sprinkle oregano.
  • Add broccoli, carrots, onions, cauliflower and stir-fry for 3-4 minutes, or until crisp and tender, sprinkle the garlic powder, and mix all ingredients together, including cooked rice.
  • Before serving add the Feta and mix once.
