Chicken Brunswick Stew

Ingredients

  • 1 whole chicken
  • 3 lbs. red potatoes diced
  • 1 lb. baby lima beans frozen
  • 1 lb. white whole kernel corn frozen
  • 3 large onions diced
  • 1 large canned tomatoes crushed
  • salt and pepper to taste
  • Texas Pete Hot Sauce to taste
  • 4 cups chicken stock

Instructions

  • Boil chicken, debone and chop. Put chicken, chicken stock, potatoes, lima beans, corn,
  • tomatoes & onions in a large pot. Add salt and pepper and Texas Pete.
  • Simmer 2-3 hours.

Notes

NOTES : Using a store bought rotisserie chicken makes this much easier and you can use canned chicken broth or stock. Do not substitute another hot sauce for Texas Pete.
