Cheese Wafers

- 1 cup butter softened
- 2 cups sharp cheddar cheese shredded
- 2 cups all-purpose flour sifted
- 1/4 teaspoon salt
- 1 teaspoon cayenne pepper
- 1 tablespoon sugar
- pecan halves
Preheat oven to 350 degrees. Freshly shred cheese and let sit at room
temperature. Cream butter and cheese. Sift dry ingredients together.
Add to butter and cheese and mix well with mixer. Chill enough to be able to shape
into small balls with damp hands. Press a pecan half into each ball.
Refrigerate dough between batches. Bake on baking sheet sprayed with Pam
for about 15 minutes or until golden around edges. Let sit on baking sheet about
10 minutes before removing to a wire rack to cool before storing.
I shred a 10 oz. package of Kraft Extra Sharp Cracker Barrel Cheese and use all of it. For thinner wafers, make smaller balls and you will have twice as many only thinner.
