Cheese Wafers

Ingredients

  • 1 cup butter softened
  • 2 cups sharp cheddar cheese shredded
  • 2 cups all-purpose flour sifted
  • 1/4 teaspoon salt
  • 1 teaspoon cayenne pepper
  • 1 tablespoon sugar
  • pecan halves

Instructions

  • Preheat oven to 350 degrees. Freshly shred cheese and let sit at room
  • temperature. Cream butter and cheese. Sift dry ingredients together.
  • Add to butter and cheese and mix well with mixer. Chill enough to be able to shape
  • into small balls with damp hands. Press a pecan half into each ball.
  • Refrigerate dough between batches. Bake on baking sheet sprayed with Pam
  • for about 15 minutes or until golden around edges. Let sit on baking sheet about
  • 10 minutes before removing to a wire rack to cool before storing.

Notes

I shred a 10 oz. package of Kraft Extra Sharp Cracker Barrel Cheese and use all of it. For thinner wafers, make smaller balls and you will have twice as many only thinner.
