Black Bean Soup

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup celery chopped
  • 1 cup onion chopped
  • 1 10 ounce can Rotel diced tomatoes & green chilies
  • 1 teaspoon chicken bouillon
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 4 teaspoons minced garlic
  • salt & pepper to taste
  • 3 15 ounce can black beans undrained
  • 1/2 cup minced parsley if desired
  • 1 cup minced ham if desired

Instructions

  • In large pot, heat olive oil and saute celery and onions. Add remaining
  • ingredients and bring to a boil. Reduce heat and simmer 15-20 minutes.

Notes

NOTES : Garnish with sour cream, cheddar cheese, avocado, or green onions. Serve with crusty bread or tortilla chips.
