Angel Hair Pasta with Chicken & Mushrooms

Ingredients
8
ounces
angel hair pasta
2
boned and skinned chicken breast halves
2
tablespoons
butter
divided
2
tablespoons
extra virgin olive oil
1
small onion
chopped
2
garlic cloves
minced
8
ounces
fresh mushrooms
sliced
1/4
cup
white wine
2
tablespoons
fresh parsley
minced
salt and pepper
to taste
Parmesan cheese
to taste
Instructions
Cook pasta.
Meanwhile, cut chicken in 1/4 inch-thick slices or bite-size pieces and
set aside.
In a 12-inch skillet, melt 1 tablespoon butter along with olive oil over
medium heat. Cook chicken, onion and garlic until chicken is almost done.
Add mushrooms and cook for l minute. Add 1 tablespoon butter and cook
until chicken is done. Add wine and parsley and simmer 3-4 minutes.
Season with salt and pepper.
To serve, spoon chicken mixture over hot, drained pasta and top with
Parmesan cheese.
