Strawberry Vinaigrette Dressing

Ingredients
- 16 ounces fresh strawberries
- 1/2 cup strawberry preserves
- 1/4 cup Champagne wine vinegar
- 1 cup grapeseed oil
Instructions
- Wash strawberries in cold water and pat dry on paper towels. Remove stems
- and cut into quarters.
- In a blender, combine strawberries, preserves and vinegar, and puree 1 to
- 2 minutes until smooth. With blender running, slowly add the oil.
- Continue to blend until dressing is emulsified. Store covered in a lidded
- jar in the refrigerator and shake vigorously to re-emulsify before
- serving.
Notes
NOTES : A serving is about 2 tablespoons. This makes a lot of dressing and doesn't keep but a couple of days so you may want to only make half of it.
