Spinach Salad Dressing

Ingredients
- 1 cup olive oil
- 5 tablespoons red wine vinegar
- 4 tablespoons fat free Greek yogurt or sour cream
- 1 1/2 teaspoons salt
- 2 tablespoons sugar or Splenda
- fresh ground pepper
- 2 teaspoons fresh parsley chopped
- 2 cloves garlic
- 1/2 teaspoon dry mustard
Instructions
- Process all ingredients in blender slowly adding oil last until emulsified. Pour into container, refrigerate and let rest for several hours before using. Will keep in refrigerator for 2-3 weeks.

Use as dressing in a Fresh Spinach Salad with the following optional ingredients:
Sliced fresh mushrooms
Bacon
Toasted Almonds
Sliced purple onions
Mandarin oranges
Boiled eggs
