Southwestern Caesar Salad with Garlic Chipotle Chili Dressing

Ingredients
- 1/2 cup mayonnaise
- 1 1/2 tablespoon canned low-salt chicken broth
- 1 tablespoon soy sauce
- 2 tablespoons fresh lemon & lime juice
- 1 1/2 teaspoon minced canned chipotle chilies in adobo sauce
- 1 tablespoon brown sugar
- 1 large garlic clove minced
- 2 medium tomatoes seeded, diced
- romaine lettuce
- fresh corn kernels grilled
- canned black beans drained
- 4 tablespoons Manchego cheese shredded
- salt & freshly ground pepper to taste
Instructions
- Whisk mayonnaise, chicken broth, soy sauce, lemon & lime juices, chipotles, brown sugar and garlic in medium bowl to blend. Season dressing to taste with salt and pepper. (Dressing can be prepared 1 day ahead. Cover and refrigerate.)
- Mix lettuce, tomatoes, corn and black beans in large bowl. Add dressing and 2 tablespoons Manchego cheese and toss to coat. Sprinkle with remaining 2 tablespoons Manchego cheese, garnish with tortilla strips or cornbread croutons, avocado slices & fresh lime wedges if desired and serve.
- Notes:
- Soy sauce may be eliminated or use Worcestershire sauce if desired.
