Roast Pork with Brie and Apples

Ingredients
- 4 ounces bacon coarsely chopped
- 1 red apple diced
- 1 medium yellow onion diced
- 3 lbs. pork tenderloin
- 6 ounces Brie cheese diagonally sliced
Instructions
- Cook the bacon, apple and onion in a skillet over medium heat until the
- bacon is crisp. Remove to a bowl. Refrigerate until cool.
- Cut a pocket in the pork tenderloin. Combine the bacon mixture and the
- cheese and mix well. Stuff into the pocket. Tie the pocket closed with 4
- pieces of butcher's string. Place in a roasting pan. Roast at 350
- degrees for 35 minutes or to 160 degrees on a meat thermometer. Let stand
- for 10 minutes before carving.
