Roast Pork with Brie and Apples

Ingredients

  • 4 ounces bacon coarsely chopped
  • 1 red apple diced
  • 1 medium yellow onion diced
  • 3 lbs. pork tenderloin
  • 6 ounces Brie cheese diagonally sliced

Instructions

  • Cook the bacon, apple and onion in a skillet over medium heat until the
  • bacon is crisp. Remove to a bowl. Refrigerate until cool.
  • Cut a pocket in the pork tenderloin. Combine the bacon mixture and the
  • cheese and mix well. Stuff into the pocket. Tie the pocket closed with 4
  • pieces of butcher's string. Place in a roasting pan. Roast at 350
  • degrees for 35 minutes or to 160 degrees on a meat thermometer. Let stand
  • for 10 minutes before carving.
