Rigatoni with Sausage & Mushrooms

Ingredients
- olive oil
- 1 large onion sliced
- 1 small green bell pepper diced
- 4 large garlic cloves minced
- 12 ounces chicken sausage w/porcini mushrooms sliced in rounds
- 26 oz. San Marzano Vodka Sauce
- 6 oz. shitttake mushrooms drained
- salt & freshly ground pepper to taste
- fresh parsley chopped
- parmesan cheese grated
- 8 ounces whole wheat rigatoni cooked
Instructions
- Saute onion, bell pepper, garlic & sausage in olive oil. Add sauce & mushrooms. Season with salt & pepper. Simmer with top off for about 10 minutes. Stir in cooked rigatoni & parsley and serve with parmesan cheese.
Notes
I use Harris Teeter's brand of sausage.
