Ricky Ricardo Chicken Wings

Ingredients
- 12 chicken wings or drumettes
- salt and pepper to taste
- 2 tablespoons creamy peanut butter
- 2 tablespoons soy sauce
- 1 1/2 tablespoons honey
- 1/2 teaspoon ground cumin
- 1 clove garlic minced
- 1/4 teaspoon crushed red pepper to taste
- 3 ounces peanuts dry-roasted, finely chopped
- 3 teaspoons coriander leaves finely chopped
Instructions
- Preheat oven to 400 degrees. In shallow baking pan lined with foil,
- season chicken wings or drumettes with salt and pepper. Bake in middle of
- oven for 30 minutes or until they begin to turn brown and become crisp.
- While chicken wings are baking, in a small saucepan, stir together peanut
- butter, soy sauce, honey, cumin, garlic and pepper flakes. Cook over low
- heat, stirring until smooth. Brush chicken wings generously with sauce
- and bake them for 10-15 more minutes. Sprinkle chicken wings immediatedly
- with chopped peanuts and coriander and let them cool slightly before
- serving.
Notes
NOTES : Peanuts should be salted.
