Pear & Feta Salad with Orange Vinaigrette

Ingredients
- 1/3 cup pecans coarsely chopped
- 1 tablespoon honey
- romaine lettuce or mesculan mix
- 2 pears thinly sliced
- 2 ounces feta cheese crumbled
- 1/3 cup sweet orange marmalade
- 3 tablespoons rice vinegar
- 2 tablespoons vegetable oil
- 1 tablespoon shallot finely minced
- black pepper freshly ground
- pinch salt
- 1/4 lemon juiced
Instructions
- Preheat oven to 300 degrees.
- Spray Pam on a foil-lined baking sheet, spread pecans and drizzle honey
- over them. Bake about 10-15 minutes until golden. Sprinkle with salt and
- let cool.
- In a large bowl, layer lettuce, sliced pears, feta cheese and pecans.
- Put sweet orange marmalade, rice vinegar, oil, shallot and pepper in a jar
- and shake until blended. Store in refrigerator.
- Toss with Orange Vinaigrette to coat just before serving.
Notes
NOTES : For vinaigrette, sweet onion or red onion may be substituted. Grilled chicken or shrimp are good additions.
