Oven Fried Catfish

Ingredients
- 4 6 oz. catfish fillets
- salt and pepper to taste
- 1 large egg beaten
- 1 cup self-rising cornmeal
- I Can't Believe It's Butter Spray
Instructions
- Preheat oven to 450 degrees. Place large sheet of aluminum foil on baking
- sheet and crimp edges to form sides. With a paper towel, lightly spread a
- very thin layer of olive oil on foil. Wash fish and pat dry with paper
- towels. Salt and pepper fish, dip in egg and then in cracker meal and
- place on aluminum foil skin side down. Spray generously with butter
- spray. Bake for about 45 minutes or until golden brown and crispy.
