Oven Fried Catfish

Oven Fried Catfish

Ingredients

  • 4 6 oz. catfish fillets
  • salt and pepper to taste
  • 1 large egg beaten
  • 1 cup self-rising cornmeal
  • I Can't Believe It's Butter Spray

Instructions

  • Preheat oven to 450 degrees. Place large sheet of aluminum foil on baking
  • sheet and crimp edges to form sides. With a paper towel, lightly spread a
  • very thin layer of olive oil on foil. Wash fish and pat dry with paper
  • towels. Salt and pepper fish, dip in egg and then in cracker meal and
  • place on aluminum foil skin side down. Spray generously with butter
  • spray. Bake for about 45 minutes or until golden brown and crispy.
